Find better MySQL image

The stock image mysql/mysql-server doesn't seem to be well configured.

We either need to tune the settings or find a better image from a different source.

Boris pointed me to docksal/mysql which seems to be much better out of the box.

Ralf pointed to drud/ddev-dbserver-mysql-8.0

Once completed, we should also apply those changes to lakedrops/docker4php
